Venison Sausage Minestrone

This hearty soup is more like stew and chock full of vitamins!
Ingredients
- 1/2 lb. ground venison
- 1 lb. hot or sweet italian sausage your preference, cooked and diced
- 1 tbs. olive oil
- 1 finely chopped red onion
- 1 stalk diced celery
- 2 cloves minced garlic
- 3 cans diced tomatoes 4th can of diced tomatoes optional
- 1 carrot chopped
- 1 red potatoe diced
- 1/2 lbs. frozen peas
- 6 cups chicken broth
- 1 bay leaf
- 1/2 tsp. dried thyme if you are using fresh thyme, double amount
- 1/4 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. dried rosemary
- 1/2 red pepper chopped
- 1 small zucchini diced
- 1 can chick peas (garbanzo beans)
- 1 tsp. Italian Sausage Seasoning Sportsman's Table Item # CYC1870
- 1 pinch salt amount subject to taste
- 1 pinch pepper amount subject to taste
Instructions
- In a large stock pot heat oil, cook sausage thoroughly and set aside. Add ground venison or beef and season with Italian Sausage Seasoning from Sportsman's Table (Item #CYC1870) and cook until no longer pink, set aside. Add onion, celery and garlic. Heat onion until is soft. Add tomatoes, carrot and rest of ingredients. Add sausage and ground venison back into pot. Cook on low until all vegetables are prepared.
