Southern Fried Catfish

If you have never had catfish before, do not let the name, Southern Fried Catfish, scare you, try it. This is delicious.
- 4 medium catfish fillets about 2.5 lbs
- 2 large eggs
- 1 tbs. milk
- 1/2 8 oz. bag Fish and Wild Game Breading Sportsman's Table Item #TW001
- 3 tbs. olive oil
- Rinse fillets and pat dry. Cut into palm sized pieces. Beat eggs. Dip fish into eggs and then into breading. Add 1 inch of oil into large frying pan and heat over medium heat. When hot, add fish to frying pan. Do not crowd fish in pan. Fry about 4 min. Turn fillets over and fry 3-4 mins. or until brown. Drain and paper towels. Serve.
