Venison Enchiladas

Ingredients
- 4 medium tomatoes chopped, about 2 cups
- 1 medium chopped red onion divided
- 1 medium chopped red bell pepper
- 3 tbs. red wine vinegar
- 1 lb. ground venison
- 1 4 oz. can green chillies undrained
- 4 tsp. chili powder
- 1 15 oz. can crushed tomatoes
- 1/2 cup shredded monterey jack cheese
- 8 corn or flour tortillas
- 1 pinch cilantro optional
- sour cream amount to taste, optional to garnish

Instructions
- Combine tomatoes, onion, pepper and vinegar, cover with plastic and let marinate for at least 30 min. Brown venison, drain. Preheat oven to 400 degrees. Spray skillet and add onions, saute 3 min., add chillies and chili powder. Cook 2 min. Add optional cilantro. Add beef and crushed tomatoes, simmer 15 min. Spray baking dish with cooking oil. Spoon venison mixture onto tortillas and roll. Place in baking dish with folded side down. Spoon tomato mixture on top and sprinkle with cheese. Serve with a dollop of sour cream. Bake 10 min.
