Deep-Fried Wild Turkey

  1. Heat the oil to 300 to 350 degrees. Rub the turkey with your own seasonings and/or inject with seasonings suggested above if desired. Use the leftover injectable marinade and rub with a little extra butter onto the outside of the turkey. Sprinke with some pepper. Using a wire coat hanger, wrap around each of the drumsticks and carefully lower the turkey into the oil. Cook for 3 1/2- 4 minutes per pound until a meat thermometer inserted into the white meat registers 180 degrees. The turkey tends to float when cooked through. Remove the turkey for the oil and drain well. Wrap in foil to keep warm. Let stand approx. 20 min. before carving.
