Sicilian Salmon

This salmon recipe is one you will want to make every week.
Ingredients
- 1/4 cup fresh lemon juice
- 4 cloves garlic chopped and crushed into fine paste
- 1 tbs. dried oregano
- 1/2 cup extra virgin olive oil
- 4 8 oz. salmon steaks
- salt amount to taste
Instructions
- Preheat broiler. Combine lemon juice, garlic paste and oregano. Cut 4 sheets of foil into squares larger than steaks. Brush squares with olive oil and place on broiler pan. Whisk remaining oil and salt into the garlic mixture. Place salmon steaks on foil squares and bend up the foil at sides. Top each with sauce. With salmon 2 " from broiler, cook for 4 min. Turn steaks without losing juices and cook 4 more min. Serve immediately with juices from foil.
