This was an original recipe we just made on a whim. We are big soup fans around here, and this is a new favorite, and of course made with venison.

This soup was an all time favorite from the first time we made it. It came together by accident, but my family absolutely loves it.
Ingredients
- 1 lb. fresh lima beans or frozen but thawed
- 1 lb. ground venison
- 4 cups water
- 5 carrots chopped
- 1 leek bulb only, chopped
- 2 tbs. minced shallots
- 2 stalks celery chopped
- 4 cubes beef bouillon
- 8 cups water
- 2 tbs. olive oil
Instructions
- In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes. In the meantime, bring 4 cups of water to a boil. Add the beef bouillon to the boiling water and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1 1/2 hours. In the meantime, brown ground venison and season with a pinch of onion powder, garlic powder, salt and pepper. Add venison to soup and simmer for at least 30 minutes until flavors blend. Serve steaming hot.
