This goose sandwich spread is a nice change and healthy alternative to processed lunch meats
Ingredients
- 1 lbs. goose meat cooked
- 7 tbs. mayonaise
- 5 tbs. lemon juice
- 5 tbs. butter
- 3 tbs. finely chopped red onion
- 1 1/2 tbs. hot pepper sauce optional, amount to taste
- 1/2 tsp. salt
- 1 tbs. dry mustard
Instructions
- Bake goose approx. 45 min. (roasting or smoking works too!) . Once meat is cool, dice into small chunks. Place meat in a blender with rest of ingredients and blend until smooth. Place in a mold and chill at least 2 hours. Remove from mold and garnish with chopped hard cooked eggs, chives or parsley. Serve with crackers or as a sandwich spread.
