Feisty (not Spicy!) Bay Scallop Stir-Fry

This fast and easy stir-fry recipe is simply delicious. It is low in salt and still full of flavor.
Ingredients
- 1 1/2 Bay Scallops Bay Scallops
- 1 cup sliced carrots
- 1 cup chopped onions
- 1 cup chopped banana peppers sweet or hot
- 1 can sliced black olives
- 2 cups broccoli florets
- 1 1/2 cups grape tomatoes sliced in half
- 1 clove minced garlic
- 1 16 oz. box thin spaghetti
- 2 tbs. olive oil
- 2 tbs. butter
- 2 tbs. Feisty Fish Rub Sportsman's Table Item #MG105
- 1 pinch ground black pepper
Instructions
- Slice vegetables and set aside. Bring pot of water to a boil. Add pasta and cook. Meanwhile, melt butter in pan with olive oil. Over medium heat add; onion, peppers, and carrots. Add minced garlic and feisty fish rub. Cook for 3-4 mins. Add ground pepper, broccoli and olives. Cook for two min. Add scallops and cook another min. or two. Add tomatoes. Cook 1 min. or until heated through. When pasta is done, drain well. Add pasta to a dish and cover with scallops and vegetables. Serve.
