Cajun Glazed Striper

- 2 striper or rock fish fillets
- 1 tbs. Merlot Fine Wine Jelly Sportsman's Table Item #MWJ01
- 1 tbs. olive oil
- 1 tsp. Spicy Cajun Seasoning Sportsman's Table Item #TW014, use appropriate amount to your taste for spice!
- Clean and rinse fish fillets. Tap with dry paper towel to remove excess water. Sprinkle cajun seasoning on fish. Bake at 350 degrees for 10-15 min. or until done, depending on the size of the fillets. Over low heat, melt merlot wine jelly in a sauce pan with olive oil. When jelly is thinned into a sauce pour or baste with a brush on fish. Place fish in oven for a min. or two to heat the glaze. Serve hot.
